We all know the problem with the tetter-totter on the playground. Up and down is great fun, but only up is not. You don't want to be on the wrong end of the tetter-totter when there is no balance. It's no fun to be stuck way up in the air while a bigger kid is firmly planted on the ground. This is exactly what your customers are afraid of. No one wants to be up in the air.

Both....or neither?
Both business models have been proven, but both can be done wrong. Some of us add value by producing inexpensive products quickly, while others add value by the time they put into their clients.
It's like those that play the stock market. Some are willing to buy it today and sell it tomorrow. They may only make a dollar, but they make that same dollar thousands of times over. Others will buy a stock knowing they will hold it for the next 5 years. Both can make money.
Let's take a look at these two options starting with the high volume studio.

What do you want your business to look like?
For the last several years I have been of the opinion that I should do everything inhouse&hire employees to handle what I don't want to/have time to do.
My ideas and preferences are changing now that I want to devote more time to my family and not be tied to my studio.
The more I educate myself, the more I see that doing everything myself is foolish. My business should exist to provide me a healthy cash flow, while satisfying some of my creative desires. The great thing is that just because this is my preference, it doesn't have to be yours. :)
